Bacon chocolate piece (price for 100 g)

We make it from pork belly and ribs and smoke it over wood, on open fires. The flavor is due, among other things, to the ideal 'pac', in which we keep the bacon for several days to release water and blood, but also to the right ratio of humidity and temperature while drying it.

We press it, put it in a dry pac, smoke it and then finally we do it all in a bora until it's perfect. Unlike pancetta, which is smoked for a very short time, we decided to extend the smoking time and got a kind of 'hybrid', with an interesting taste.
